Strike While the Iron Is Hot! Waffles & Pizzelles
If you've never had an authentic Belgium waffle, your life isn't complete. No, seriously you'll fall in love with what is called a Leige Waffle - a yeasted brioche-like dough studded with pearl sugar that cooks up to caramel-glazed delight. Give me a moment will you... while I ponder this waffle that is so different to most Americans. These babies are waffle royalty, people!

We could stop here, and I swear you'd go home happy. But, us being us, we aren't apt to do that, are we? Of course, not!
While our Liege waffle dough is rising, Paul will guide you through the waffle's fancy little cousin - the Pizzelle. A quick batter recipe, these little gems are also made using a hot iron, and can be both savory and sweet, shaped, filled...but in the end, devoured!
We'll also learn how to purchase a waffle iron and the difference between an American style waffle iron and a Belgian style iron, temperature control. It's all about the butter and eggs, folks, with some pearl sugar and talk about toppings thrown in for good measure.
