Flavors of Portugal - A Special Food & Wine Dinner with Chef Andrew Kneessy
Portugal may have introduced tea to England and tempura to Japan, but the country’s cuisine and its amazing wines still remain a mystery to most food and wine lovers outside its borders.
The roots of Portuguese food lay in both native peasant cookery and the ingredients obtained through trade routes established centuries ago. Seafood, sausages, spices, pastries and rice remain the staples of many Portuguese restaurants from Lisbon and Porto to its tiny country villages where time appears to have stopped centuries ago.
The wines produced in this magical land also reflect a passion for honoring the terrain that seems to have been ordained to make fabulous wines. We’re not just talking about the unctuous port wines produced along the Douro River but also the amazing wine values found in the Vinho Verdes, Vinho Tintos and Minhos, plus others.
Chef Andrew Kneessy, an accomplished Executive Chef, has used his extensive wine and food knowledge to host many dinners where he created perfectly harmonized food and wine pairings. Chef Kneessy worked at the Occidental Restaurant in Washington, DC which led him to opportunities at the Canadian Embassy, Blair House, and the White House, where he cooked for George Bush and Bill Clinton, among many other amazing accomplishments in his career. So, you’re in for a treat tonight.
The menu he has designed for this evening will introduce you to the magic of Portuguese food and wine. Join us for this trip through Portugal as Chef leads us through dishes such as Salt Cod Croquettes, Jumbo Shrimp with Chorizo, Baby Clams, White Beans and Smoked Paprika Escabeche, Skirt Steak with Garlic Potatoes, Braised Greens and Madeira Glaze, and many more. We’ll pair, and learn about, Portuguese wines tonight, as well.
Come hungry for both exceptional chef-prepared dishes and surprising wines but also for food knowledge that will likely make you book a flight the next day! Your first Portuguese word to learn for this class is “Obrigados!” which means “thank you”… and is exactly what you’ll be telling Chef Andrew at the end of this incredible evening.
