“No More Funky Chicken!” - Fundamentals of Chicken Cookery
This is a “must-take” class for all of you who make chicken a regular part of your dining repertoire. And, it’s taught by a cluckin’ awesome culinary pro! Chef Dana Holland is a seasoned culinary instructor and will share his expertise in this fundamentals class that’s all about “the bird”.
That’s right, Chef will start off with a brief discussion on shopping and preparing a chicken, including a demo on how to break down a whole chicken.
Then, we move on to our cooking lesson as Chef teaches essential culinary techniques as you make a basic Chicken Broth - a versatile recipe that every home cook should have in their back pocket.
You’ll also learn to roast a whole chicken and then use it to prepare Sally’s Favorite Chicken Soup. We’ll round out our chicken menu with Puerto Rican Asopao – braised chicken thighs with chorizo sausage, tomatoes, olives and capers....and Korean Chicken Wings with a perfectly paired Dipping Sauce.
This is a comprehensive class that will also cover buying rules, fresh versus frozen, handling techniques, safety considerations, storage essentials, cleaning, cooking temperatures, and the basic cooking methods applicable to poultry. Plus, awesome recipes that your whole family will love!
