Join us for a limited enrollment “up close and personal” 3-hour cooking class where you’ll enter into an intimate one-on-one cooking experience with a seasoned culinary instructor. 

Expect lots of hands-on time as you work alongside professional Chef Richard McPeake who will teach you all of the ins and outs of some more advanced knife skills. In this class, you’ll take your knife skills to the next level when you learn to use a boning knife and a paring knife as Chef Richard McPeake teaches you the skillful and professional way of fabricating a whole chicken.

We’ll produce Chicken Breast Supreme, Chicken Tenders, Semi-Boneless Chicken Thighs and Legs, and we’ll practice the art of roll cutting a bell pepper, proper cube dicing, and tournee, a classic fresh vegetable cut that many chefs still attempt to perfect!

In addition, we’ll discuss various types of boning knives and their uses, sharpening, storage and other important information. This is a full “hands-on” class under the supervision and tutelage of one of the best in the biz. (You may bring your own boning knife/knives to class, or you may use ours.)

So, what to do with all this chicken and vegetables you’ve masterfully cut during class, you say? Well, it would make sense that you would also learn how to make a proper chicken stock, now wouldn’t it? We will take the rest of the chicken and proper diced peppers and potatoes, to make a famous soup called a “Philly Pepper Pot Soup .”  (This legendary soup was a staple for the troops during the American Revolutionary War.  Street vendors sold it to the tune of “Pepper Pot!  Smokin’ Hot!” and Campbells’ Soup Company even sold a condensed canned version for 100 years!  Our version will contain chicken.)

NOTE: Basic knife skills should be under your belt for this class.  if you have taken our Knife Skills 101 course, that would be perfect as a base for this course as well, but it is not required. (We are offering a Knife Skills 101 class on Tue 1/07.)
