It’s no mystery why savvy food and wine lovers have been streaming into the Pacific Northwest for decades.

To its east are phenomenally fertile volcanic-enriched valleys which are a utopia for wine grapes and to the west are oceans brimming with rich seafood, making this region a veritable cornucopia. Mix in the fact that Modern Pacific Northwest cuisine has been highly influenced by the late James Beard, an Oregon native, chef and cookbook author who championed simple cooking techniques that highlight fresh flavors.  The result is the Pacific Northwest Region’s food ideology of utilizing local and sustainable sourced ingredients to create beautifully simple dishes that impress. In fact, most locals are at a loss as to how to identify their cuisine simply because their cuisine IS so simple. 

Join us for this food and wine event as tonight’s instructor, Chef Andrew Kneessy, shows us his ‘take’ on the food & wines from the Pacific Northwest.  He is an accomplished Executive Chef and has used his extensive wine and food knowledge to host many dinners where he created perfectly harmonized food and wine pairings.  

We are lucky to have L’Ecole No. 41 Winery’s national wine rep Matt Rice to talk us through some of their amazing wines we will be pairing with dinner. L’Ecole is an award-winning 3rdgeneration family-owned, artisan winery focusing on ultra-premium, distinctive wines that reflect the unmistakable typicity of Washington State and the unique terroir of Walla Walla Valley vineyards.  

It will be a night of wine education and beautiful foods prepared by a chef whose resume includes the Occidental Restaurant (Washington, DC), the Canadian Embassy, Blair House and the White House, where he cooked for George Bush and Bill Clinton, among many other amazing accomplishments in his career, so you know you’re in good hands this evening. 

The wines will be specially chosen by Chef to complement dishes such as Summer Garden Tartlet with Lemon Cream, Goat Cheese Brûlée with Grapefruit, Spring Greens & Pistachio Vinaigrette, Crab Stuffed Salmon with Melon Carpaccio & Basil Oil, Grilled Marinated Skirt Steak with Olive Oil Tapenade Stuffed Yukon Potato Shaved Fennel & Carrot Salad and for dessert Chef's sweet "take" on Coffee & Donuts that we promise you'll remember.  Chef will show you how to create these dishes and why he chose the paired wines.
