An Evening in The Keys: Fabulous Floribbean Cuisine with Chef Richard McPeake
Let’s catch the 'Keys Disease'... that sudden desire to cut ties with home, move to the Florida Keys and learn about the flavors of this region’s Floribbean cuisine. Chef Richard McPeake is ready to take us on this delicious culinary journey.
Key West, Florida, is somehow more Caribbean than Floridian. Its plethora of transplanted artists, writers, hippies and of course, chefs work very hard to keep it that way too! Happy hours and the elusive 'green flash' are a must, with the general move afterwards towards dinner, usually under the canopy of lights strung from tree to tree and ALWAYS centered around the ocean.
Floribbean Cuisine is heavily influenced by immigrants from Haiti, the Bahamas, Jamaica, Cuba and even South America, and emphasizes extremely fresh ingredients and complex medleys of spices, seafood and poultry, and a generous use of fresh fruit and tropical citrus, all with an unpretentious and natural presentation style.
Chef McPeake has designed a fabulous 'Floribbean' menu that begins with a little toddy reminiscent of the famous St. Germain Restaurant, and then moves on to an appetizer of elegant Ceviche Cocktail Martinis. Next, you'll enjoy Pan-Seared Barramundi with a freshly made Mango Jalapeno Salsa, and Braised Asparagus Spears with Prosecco Vinaigrette. To end our meal, Key Lime Pie Shooters. Yeah, Mon.
