‘Tis the season for holiday entertaining, and tonight’s class will focus on the ‘piece de resistance’ to your holiday meals as you learn to make impressive custard-based desserts.

A luxurious crème brûlée is one of life’s simple pleasures, and so is cheesecake. Tonight, Pastry Chef Erik Sharp will focus on teaching the fundamentals needed to make the perfect custards and cheesecakes. He’s an engaging professional with tons of experience, such as Pastry Chef for Kansas City’s renowned American Restaurant, former owner of Three Spoons of Sugar and much more, so you can be assured you’re in good hands.

Creating perfect custard requires an understanding of eggs and their properties. Chef will teach several custard applications to create exquisite desserts such as Espresso Crème Brûlée with Chocolate Sauce and a hard-caramel top, as well as a traditional Vanilla Crème Brûlée with caramel crème sauce. That’s not all, you’ll also learn a classic Pot de Crème. The possibilities are endless when it comes to custards.

Then, he’ll move on to our cheesecake lesson. Making cheesecakes from scratch isn’t as hard you might imagine – they’re egg-based and have some fundamental techniques that apply to their preparation that make for a perfect cheesecake.

Chef will cover it all in this informative pastry arts class and you’ll leave with the knowledge needed to serve up showstopping desserts for your next dinner party.

NOTE:  Unless otherwise noted, each evening class fee includes one glass of beer/wine, with additional beverages available at a nominal cost.

NOTE: For Onsite Classes,when you arrive, please check in with our Class Assistant who will give you information as to where you will be seated.  We will be arranging our classrooms to allow for social distancing. In order to comply with governmental orders and for the protection of our guests and staff, we ask that you wear a mask when here at The Culinary Center of Kansas City. If you are planning to sit next to someone else attending the class, we would suggest arriving at least 20 minutes prior to the start time of the class so that we can address that request.  Both students would need to be comfortable with the request to be seated together.
