Master Class with Chef Richard McPeake: Classic Italian Cuisine
Chef Richard McPeake teaches our popular 9-week Professional Culinary Arts™ classes and is excited to offer this class on classic Italian cuisine, to be taught in the same manner and at the same level.
Although you do not need to be a graduate of the Pro Series, you do have to have a basic understanding of the most basic cooking techniques.
Chef McPeake is a graduate of the Culinary Institute of America, cookbook author and seasoned culinary instructor, so you know you’ll learn not only how to prepare this cuisine, but also why!
So, don your white chef coat (or borrow one of ours!) and get ready for a serious 3-hour class on an amazing cooking style. He’ll share his favorite old-school Italian recipes as you learn to make fresh pasta from scratch using his foolproof noodle dough.
Dishes covered as you learn include a Cannelloni Piedmontese, Grilled Fennel Salad with Sambuca and Fresh Grapefruit, Fettucini alla Burro (the ‘original’ Italian Alfredo Sauce) and Semifreddo.
Chef will also include wine tastings that pair with tonight’s menu.And, as in all of Chef’s Pro classes, you will work in small groups and practice what he preaches. These hearty old-world dishes are some that will be in your culinary arsenal for rest of your life!
