Master Class with Chef McPeake: Moroccan Cuisine including Tagine

Chef Richard McPeake teaches our popular 9-week Professional Culinary Arts™ classes and is excited to offer this class that explores the fabulous foods of Morocco, including cooking with a tagine, that will be taught in the same manner and at the same level.
Although you do not need to be a graduate of the Pro Series, you do have to have a basic understanding of the most basic cooking techniques.
Chef McPeake is a graduate of the Culinary Institute of America, cookbook author and seasoned culinary instructor, so you know you’ll learn not only how to prepare this cuisine, but also why! So, don your white chef coat (or borrow one of ours!) and get ready for a serious 3-hour class on an amazing cooking style.
Tonight, we’ll travel to exotic Morocco and explore the use of many rich spices extensively used in Moroccan cuisine, as Chef demonstrates the techniques of cooking with one of his favorite cooking vessels – the tagine. Stews are the most popular and well-known foods to make in these tall, conical cooking vessels.
Tonight’s menu includes Chicken with Chickpeas & Fresh Mint, Lamb with Raisins, how to create a versatile Moroccan Spice Blend ‘Ras El Hanout’, and Spicy Moroccan Orzo Pilaf.
Chef will also include wine tastings that pair with tonight’s menu. And, as in all of Chef’s Pro classes, you will work in small groups and practice what he preaches. These savory traditional dishes are some that will be in your culinary arsenal for rest of your life!
