Southern Cajun Cookin’, Louisiana-Style! with Chef Richard McPeake
Let’s head on down to the Bayou for some good ol’ southern cooking! Listen here, y'all, tonight, we’re takin’ classic Southern-Style dishes and showing you “how it’s done right” – Chef McPeake- style! Thirty plus years as a professional chef and a graduate of the Culinary Institute of America, Chef Richard has tricks up his sleeve that you won’t believe.
Tonight, he’ll explore the spicy world of authentic Louisiana-style Cajun cuisine that’s brimming with tradition, culture and flavor, and best exemplified by the dishes found in the south. No one knows this unique cuisine better than Chef Richard McPeake who spent 25 years supervising the Seaport Cajun Café, on Bourbon Street in New Orleans.
Chef Richard has designed this class so you can learn to apply essential culinary skills as he teaches you to prepare the interesting regional dishes he knows and loves so well. He’ll teach important culinary fundamentals along the way including: the trinity (Cajun Mirepoix); making and using a roux; basic knife skills, frying tips, sauce-making techniques and much, much more!
Hey, you’ll even get to help Chef prepare some of our tasty southern delights (safely socially distanced, of course!) such as Savory Gator Coubion (the tomato stew of the Swamp People), an assortment of tasty fried seafood, plus Chef will teach you to make a N’Awlins’ favorite – the Bourbon street Po’ Boy, with all the fixins’ including the classic New Orleans Remoulade. Oh Boy, Oh Boy, Oh Boy! Talk about wantin' to slap somebody!
This menu is so dang good ,and really so easy to prepare, when you’re learning from one of the best southern-cooking chefs in the business! No one goes home hungry tonight…..guaranteed!

NOTE: For Onsite Classes, when you arrive, please check in with our Class Assistant who will give you information as to where you will be seated. We will be arranging our classrooms to allow for social distancing. In order to comply with governmental orders and for the protection of our guests and staff, we ask that you wear a mask when here at The Culinary Center of Kansas City. If you are planning to sit next to someone else attending the class, we would suggest arriving at least 20 minutes prior to the start time of the class so that we can address that request.
