Master Class: German Heritage Cooking

Chef Richard McPeake teaches our popular 9-week Professional Culinary Arts™ classes and is excited to offer this class on classic German Heritage cuisine to be taught in the same manner and at the same level. Although you do not need to be a graduate of the Pro Series, you do have to have a basic understanding of the most basic cooking techniques.
Chef McPeake is a graduate of the Culinary Institute of America, cookbook author, and seasoned culinary instructor so you know you’ll learn not only how to prepare this cuisine, but also why! So, don your white chef coat (or borrow one of ours!) and get ready for a serious 3-hour class on an amazing cooking style.
Tonight, it’s all about authentic Heritage (Grandma’s Way) German food as Chef Richard shares his favorite recipes and you learn to foods that are loaded with flavor and rich in tradition.
German’s boil, simmer, broil, sauté or braise smaller pieces of meat, large pieces of meat are either braised or roasted. We’ll use all of some these methods tonight in traditional dishes such as Lentil Stew with Bacon (‘Linseneintopf mit Speck’), Weiner Schnitzel a la Holstein Homemade Spatzle, Blaukraut (Braised Sweet & Sour Red Cabbage) and Fresh Apple Strudel using phyllo dough. Chef will also include wines tastings that pair with tonight’s menu.
As in all of Chef’s Pro classes, you will work in small groups and practice what he preaches. These hearty old-world dishes are some that will be in your culinary arsenal for rest of your life!
